Previsión de demanda de una empresa del sector de la industria de alimentación

Abstract

En este trabajo se ha analizado la demanda diaria de una empresa del sector de la industria alimentaria, concretamente de la industria de panadería, bollería y pastelería durante un periodo de dos años para posteriormente realizar un estudio de previsión de demanda sobre esta empresa, en un periodo de un ciclo anual. Para abordar este tema se comenzará con una introducción en la que se expondran los motivos por los que se realiza este trabajo y los objetivos de éste, para luego exponer los modelos de previsión de demanda que se pueden aplicar a diferentes series temporales. Este análisis se realiza para encontrar el método que mejor se ajusta a las características de demanda de la empresa estudiada. El objetivo es preveer la demanda de la forma más precisa posible, lo cual puede suponer un ejercicio mucho más eficiente de la empresa, y, por tanto, una mejora de los beneficios. La previsión de la demanda es muy compleja, pero con el estudio de las características del mercado y de la demanda de años anteriores es posible realizar una buena aproximación. El objetivo principal del trabajo será realizar la previsión agregada de las líneas de producción, y, posteriormente desagregar la demanda de un mes concreto en todos los productos del catálogo de la empresa.

The study in this Project is an analysis of the demand of a company in the industry of bakery and pastry in a period of 2 years for a posterior study of a demand forecast of this same company in a year cicle. To adress this issue, the project will begin with a brief introduction in which will be exposed the reasons and the main objectives to which this project is done. Then every different methodology to obtain the forecast of demand that can be applied to companies will be explained, as well as the types of demand that can appear in a Enterprise. The reason of this analysis is to find the method that applies better to the characteristics of the company studied. The objective of the above is the forecast of the demand the most precise way, which, translates in much more efficiency in the exercise of the company, therefore, a considerable improvement of benefits with the same amount of work done. This study, the previsión of demand, making it a exact forecast of the future demand is very complicated, but with a good study of the characteristics of the market and demand of past years it is posible to obtain an accurate forecast of demand. The main objective of this Project is to obtain the agregate previsión in different groups of production of the coming months of production, and, posteriorly, desagregate the demand of a specific month in all the elements manufactured.
