El fruto del olivo (Olea europaea), y los productos derivados, representan una fuente valiosa de compuestos naturales con importante bioactividad. El presente Trabajo de Fin de Máster describe dos nuevos procedimientos, rápidos y precisos, para la extracción y el análisis de los compuestos bioactivos más importantes de la aceituna: oleuropeína y sus metabolitos, manitol, y los ácidos maslínico y oleanólico. Si bien ambos métodos se caracterizan por unos porcentajes de recuperación muy elevados, aquel que incluye la homogenización del fruto en seco ha rendido extractos con los más altos contenidos de los diferentes compuestos diana. The olive fruit (Olea europaea) and derived products represents a valuable source of natural compounds with important bioactivity. This Master's Thesis describes two new fast and accurate procedure for the extraction and analysis of the most important bioactive compounds of olives: oleuropein and its metabolites, mannitol and also maslinic and oleanolic acids. Although both methods are characterized by very high recovery rates, that procedure including the dry homogenization of the fruit has yielded extracts with the highest contents of the different target compounds. |
