En el presente trabajo, se muestra en primer lugar y dando una visión global, el proceso de elaboración de cerveza, así como las distintas prácticas habituales posteriores a la obtención del producto final. Posteriormente, se dan a conocer los criterios usados para la clasificación de este producto. Ambos puntos deben ser entendidos por el lector como preámbulo al contenido principal de este texto. El contenido principal, explica los distintos parámetros a analizar en la cerveza que se han considerado esenciales u oportunos, mostrando por qué es necesario su conocimiento, así como las técnicas y procedimientos de análisis empleados para ello. Este texto se centra en los análisis que se pueden realizar con operaciones físicas o químicas dejando de lado aquellos propios del campo de la microbiología. A continuación, se plantea la creación de un laboratorio de análisis para este producto, con la finalidad de ofrecer sus análisis a la cervecería artesana que no dispone de las herramientas para realizarlos. Se dan a conocer su orientación, principales funciones y análisis realizados, elegidos entre los métodos expuestos. Además, se realiza una estimación del coste de la inversión inicial mediante los costes de los distintos equipos necesarios para realizar los análisis ofertados, de los que se muestran las especificaciones técnicas en forma de anexos al documento. Por último, se exponen las principales conclusiones obtenidas tras la realización de este proyecto. The following paper will begin by giving an overview of the process of beer production, as well as discussing the different techniques which are usually employed after the final product has been obtained. Subsequently, the criteria used for the classification of this product will also be detailed. Both points should be understood by the reader as a preamble to the main content of this text. This main content will explain the different parameters considered to be appropriate for the analysis of beer, justifying why they should be used, whilst also explaining the analysis techniques and procedures employed. This paper focuses on analyses which can be obtained through physical or chemical procedures, without aiming to discuss those procedures associated with the field of microbiology itself. Hereafter, the paper will propose the creation of a laboratory designed to analyze this product in order to make this analysis available to craft beer producers who currently lack the equipment necessary to carry out such research. The guidelines and most important functions of the chosen methods, as well as the analyses performed, will also be detailed. Furthermore, an investment cost estimation is made based up on the individual cost of each of the different pieces of equipment required to obtain the analysis offered, the technical specifications of which can be found in the annexes of the present document.
