Abstract | Con frecuencia, durante el procesamiento, los alimentos se someten a diferentes tratamientos térmicos (deshidratación, esterilización, pasteurización, congelación, refrigeración, etc.) con la finalidad de extender su vida ... Con frecuencia, durante el procesamiento, los alimentos se someten a diferentes tratamientos térmicos (deshidratación, esterilización, pasteurización, congelación, refrigeración, etc.) con la finalidad de extender su vida comercial o elaborar nuevos productos a partir de las materias primas adecuadas. Los procesos térmicos pueden ser analizados y estudiados a través de los modelos teóricos y empíricos. Hecho que se debe a que muchos de estos se basan en el intercambio de calor y humedad de un fluido (gas/líquido) y los alimentos sólidos. Aunque la mayoría de los modelos de transferencia de calor y masa sólo puede ser resueltos analíticamente para los casos simples, los métodos numéricos son útiles para estimar el comportamiento térmico de los alimentos en condiciones complejas, pero realistas. En el presente trabajo se desarrolla el estudio teórico y cualitativo de un tratamiento térmico de secado aplicado sobre un producto de la industria alimentaria como es la uva, a través de los mecanismos de transferencia de calor involucrados, con el objetivo de dar a conocer algunas de las herramientas teóricas y cualitativas que nos permiten describir el comportamiento de los alimentos ante estos procesos, así como los principios que los rigen y algunas limitaciones. Un tratamiento caracterizado por una doble finalidad; generar un nuevo producto (pasas de uva) y aumentar la vida comercial del mismo. Se realiza para ello un estudio que a diferencia de la termodinámica que estudia la transferencia de energía térmica entre en estados de equilibrio, se encarga del estudio de esa misma transferencia pero entre estados de no equilibrio (en instantes distintos al de la posición de equilibrio inicial y final). Este estudio se ha aplicado considerando un secado natural/solar de la uva a 25ºC (considerando solo convección y convección + radiación), así como para un secado artificial/convencional a diferentes temperaturas (50, 60 y 70 ºC), con el objetivo de visualizar gráficamente si existe grandes diferencias entre ambos métodos de secado. tanto en una uva aislada como en n uvas. |
