Abstract | Las bases de nuestra salud, bienestar y longevidad están muy relacionadas con la diversidad bioquímica de los alimentos que tomamos. La nutrición actualmente se apoya en diferentes ciencias como la bioquímica, biología ... Las bases de nuestra salud, bienestar y longevidad están muy relacionadas con la diversidad bioquímica de los alimentos que tomamos. La nutrición actualmente se apoya en diferentes ciencias como la bioquímica, biología molecular, genética y fisiología general. El cambio de pasar de una epidemiología clásica a darle un enfoque molecular está directamente relacionado con el hecho de que los efectos de los alimentos en la salud no pueden ser completamente entendidos sin una comprensión más profunda de cómo los nutrientes actúan a nivel molecular. La nutrigenómica se vincula al estudio del genoma, y a conseguir con la ayuda de la biotecnología y estudios biomoleculares, lograr conocer la influencia de los diferentes alimentos en los sistemas homeostáticos, permitiendo aproximaciones a estimar tanto riesgos como beneficios potenciales en fases previas a enfermedades y extender la influencia de la dieta en la salud, en función de la genética individual. Además, la nutrigenómica contribuirá a optimizar el diseño de estrategias que consistan en nuevas recomendaciones dietéticas que consigan restaurar y mejorar la homeostasis metabólica, mejorar la salud, ayudar a conseguir un estado de bienestar permanente y prevenir las enfermedades que se relacionen de cierta manera con la dieta. La velocidad de penetración de esta nueva ciencia en la vida diaria vendría de la diversidad de los alimentos que ingerimos y de la propia complejidad de nuestro sistema metabólico. Hay que tener en cuenta que los procesos metabólicos que extraen la energía para mantener nuestras funciones vitales y hacer posible nuestro crecimiento de una manera apropiada, dependen de otros factores, como la actividad física, las características emocionales, y los socio-económicos |
