extrañar que los procesos relativos a su cultivo se ... El tomate es una de las hortalizas más consumidas a nivel mundial, no en vano, en 2021 su cultivo llegó a los 190 millones de toneladas. Dados estos datos, no es de extrañar que los procesos relativos a su cultivo se vean en constante evolución. Como ocurre en toda la industria alimentaria, la tecnología del análisis de imagen está adquiriendo gran importancia, consiguiendo mejorar y optimizar innumerables procesos. En este trabajo se van a abordar los aspectos más importantes de la tecnología de análisis de imagen y como esta está siendo utilizada en la industria del tomate. Esta tecnología está influenciando toda la cadena de producción. Comenzando desde el campo de cultivo: mediante el análisis de las necesidades y salud de las plántulas, la determinación del estado de madurez de los frutos, la detección de enfermedades de las plantas o incluso su incorporación al proceso de recolección a fin de construir recolectores automatizados. Una vez que los frutos llegan a las plantas de tratamiento también existen multitud de etapas en las que las técnicas de análisis de imagen están siendo utilizadas: clasificación automática de los frutos en base a su variedad, tamaño, estado de maduración o la retirada de frutos con defectos o enfermedades. Todos estos procesos aumentan el rendimiento de las plantaciones al mismo tiempo que consiguen proveer a los consumidores finales de frutos de mayor calidad y con una mayor seguridad alimentaria. Finalmente, hay que tener en cuenta que estas tecnologías de análisis de imagen no son ajenas a la vertiginosa evolución que están sufriendo todas las tecnologías de la información, gracias a la incorporación de la inteligencia artificial, las aplicaciones y usos de los trabajos mostrados no van sino a evolucionar y obtener mejores resultados en un futuro muy próximo. Tomato is one of the most consumed vegetables in the world, nevertheless, its farming went up to 190 million tons in 2021. Given this data, it is not surprising that the processes related to its farming are kept in constant evolution. Same as it happens with the entire food industry, the image analysis technology is gaining relevance, making progress and optimizing countless processes. In this work the most important aspects of image analysis and how it is being used in the tomato industry are approached. This technology is affecting the entire production chain. Starting from the farming fields: through the analysis of the needs and health of the seedlings, determining the maturity of the fruits, detecting plant diseases or even by including it into the recollection process in order to create automated pickers. Once the fruits arrive at the processing facilities there are also several stages in which image analysis techniques are being used: automated classification of fruits in terms of their variety, size, maturation or removing fruits that are faulty or with diseases. All these processes improve the performance of the plantations and, at the same time, they manage to provide the final consumer with higher quality and safer fruit.. Finally, it is important to take into account that the image analysis technologies are affected by the dramatic speed at which all information technologies are evolving thanks to the addition of artificial intelligence, the applications and use of the works shown will only evolve and obtain better results in the very near future. |
