Tras su evolución en el tiempo, ha conseguido ser uno de los principales brebajes con mayor consumo del mundo y sobre todo en Europa y España. Esta bebida está compuesta por agua, cereales, lúpulo, levadura y otros adjuntos, como pueden ser el azúcar, la miel o cualquier otro ingrediente que cambie la sensación organoléptica de esta. El proceso de elaboración se puede resumir en las siguientes fases: limpieza, malteado, molienda, macerado, filtración, cocción, fermentación, guarda, pasteurización y envasado. En la actualidad existen una gran variedad de cervezas, pudiéndose clasificar de diferentes formas según procedencia, tipo de fermentación, etc. En este Trabajo de Fin de Grado, se hace una detallada descripción del equipamiento necesario para la elaboración de cerveza artesanal (50 litros), comenzando por la elaboración de mosto cervecero hasta la fermentación y embotellado de la cerveza. Además, se presenta el proceso y los resultados de una experiencia de fabricación realizada con el equipo mencionado. La prueba de fabricación realizada, servirá para proponer las medidas de seguridad que deberán ser incorporadas y las propuestas de mejora para la utilización de estos equipos. After its evolution over time, it has become one of the most consumed beverages in the world, especially in Europe and Spain. This drink is composed of water, cereals, hops, yeast and other adjuncts, such as sugar, honey or any other ingredient that changes its organoleptic sensation. The brewing process can be summarized in the following phases: cleaning, malting, milling, mashing, filtering, boiling, fermentation, storage, pasteurization and packaging. At present there is a great variety of beers, which can be classified in different ways according to their origin, type of fermentation, etc. In this Final Degree Project, a detailed description is made of the equipment necessary for the production of craft beer (50 liters), starting with the production of brewing wort up to fermentation and bottling of the beer. In addition, the process and the results of a brewing experience carried out with the mentioned equipment are presented. The manufacturing test carried out will be used to propose the safety measures to be incorporated and the improvement proposals for the use of this equipment. |
