De Computis, 17 (1), 66-97. https://doi.org/10.26784/issn.1886-1881.v17i1.374.1886-1881https://hdl.handle.net/11441/147359El propósito de este artículo es doble: en primer lugar, analizar los procedimientos contables que utilizaba el Colegio de la Compañía de Jesús de Cádiz para controlar los fondos que se empleaban en el cultivo de la viña que tenía en Jerez y, sobre todo, para gestionar los flujos de la bodega en la que se almacenaban los vinos procedentes de aquella y, en segundo lugar, a partir de la información procedente de la documentación primaria utilizada — los libros 613 y 1.919 de la Sección Clero del Archivo Histórico Nacional (Madrid) — reconstruir las magnitudes básicas y el funcionamiento de la bodega, entre mediados del siglo XVII y mediados del siglo XVIII. El estudio de estos libros nos ha permitido conocer aspectos fundamentales del funcionamiento de la bodega del Colegio, entre los que destacamos: la ausencia de libros específicos de bodega; las dificultades existentes para gestionar las entradas y salidas de caldos, por tratarse de mostos y de vinos, respectivamente y la preocupación por garantizar la calidad de la producción mediante el establecimiento de varios trasiegos al año y a través de la utilización de prácticas enológicas que, con toda prudencia, anticipan el sistema de criaderas y soleras, término éste que se utiliza ya en algunos apuntes contables de finales del siglo XVII.The aim of this paper is twofold : first, to analyze the accounting procedures implemented by the College of the Society of Jesus in Cadiz to control the funds that were used in cultivating the vineyard it had in Jerez de la Frontera, and especially to manage the flows of wine stored in the Society’s wine cellar, and second, to reconstruct the principal indicators and the functioning of the wine cellar on the basis of the primary documents on which this article is based — books 613 and 1919 of the Clergy Section of the National Historical Archive (Madrid) —from the mid-Seventeenth to the mid-Eighteenth century.
